History of Chinese Food
  • China is a country where the preparation and
    appreciation of food has been developed to the
    highest level over many centuries. Chinese
    culture considers cooking an art. All other
    philosophies consider the preparation of food a
    craft.

Confucius
  • Confucius loved and respected cooking. He taught
    table etiquette and respected the art of good
    manners, most of which still apply today. For
    example, the tradition of cutting food into bite
    size pieces during preparation, and not at the
    table is unique to the Chinese culture. The use
    of knives at dinner is considered poor taste,
    because Confucius thought that instruments used
    for killing should be banned from the dinner
    table. This is why the Chinese invented and still
    use chopsticks.

Taoism
  • Taoists were interested in the healthy aspects of
    food. They discovered that certain foods had
    medicinal value. For example, ginger is used to
    soothe an upset tummy and also as a cure for a
    cold.

Types of Food - Dim Sum
  • A unique Chinese food is Dim Sum. Dim Sum is more
    than a category of dishes it is an eating habit.
    Dim Sum can be steamed, fried or braised and are
    eaten as a small snack. Dim Sum is of Cantonese
    origin.

Types of Food - Rice and Noodles
  • Rice, known as fan, is the most basic staple food
    in China.
  • Noodles occupy an important position in Chinese
    cuisine. Really the Chinese invented the
    noodles, and they were brought to the European
    noodle country, Italy, by Marco Polo only in the
    13th century. There are two kinds of noodles, egg
    or mien and rice noodle or bijon (in English they
    are sometimes called glass noodles because they
    look like they are made of glass and almost see
    through).
  • According to the superstitious Chinese, long
    noodles mean long life.

Types of Food - Soups
  • Two of the most famous Chinese soups are Shark
    Fin and Birds Nest Soup. Shark Fin Soup is not
    as popular today as people are concerned about
    the killing of so many innocent sharks. My advice
    is DO NOT EAT SHARK FIN SOUP. When the buying
    stops the killing can too!
  • Birds Nest Soup really is made from Swallows
    nests, who build them from seaweed, and glue this
    together with their saliva - YUK!

Types of Food - Weird and Wonderful?!
  • Chinese love to eat all sorts of fish and meat,
    including Snake, Cat and Dog. Snake meat (which
    tastes like chicken) is popular in winter as it
    is considered to be heart warming.
  • A special dish named Dragon, Phoenix, Tiger is
    made from snake, chicken and cat and is supposed
    to make you fell young and energetic!
  • Pork is the most common meat in all Chinese
    cooking

My Favorite Dishes
  • My favorite dishes are dim sum, noodles, fried
    rice yeung chow style, salt and pepper prawns,
    and spring rolls.
  • Me and my family love to go to Chinese
    restaurants on Lamma. Sometimes we choose our own
    live fish from the water tanks to have for lunch.
