Business overview
  • 2 locations The Forks and Westminster
  • Three families own and run the 2 locations.
  • There is one general manager
  • Each location has counter staff and bakers all
    working various shifts.
  • Tall grass is a neighborhood bakery that supports
    organic agriculture and the production of food
    locally.

Placement responsibilities
  • Determining what is needed for daily bake
    including daily breads, special orders and
    wholesale orders.
  • Mixing all bread, cinnamon bun, and bun dough.
  • Shaping and processing the dough.
  • Proofing and baking the breads and having them
    brought out to the display cases to be sold.

Assessment of professional and personal gains
  • Working at Tall Grass provided me with a great
    deal of bread baking experience. I became skilled
    in mixing, processing and baking of many
    varieties of breads.
  • Organizational skills were a very important
    aspect of my job. Once I became more organized I
    learned to do my job more efficiently and became
    the primary bread baker.

  • The bakery specializes in fresh milled, high
    quality, whole grain breads.
  • All flour utilized is sourced as whole grain,
    directly from local organic farmers.
  • The bakery pays a minimum of three times the
    wheat board price, maintaining profitability by
    processing the grains on site. This ensures the
    bakery will have access to the freshest, most
    nutritious flour available and will result in a
    favorable bread product.

Critical events
  • I became the primary baker who was responsible
    for producing the breads that were sold each day.
  • I trained new bakers to work along side with me.
  • Baked for many large events including the Folk
    festival and several large conferences.
  • Baked very large weekly orders for Via rail.
  • During a storm we had to do a very large wedding
    bread order and had to stop and start over at
    Westminster as there was no power for us to bake
    the bread at the Forks!

In closing..
  • This co-op term provided me the knowledge, skill
    and confidence to continue learning and
    developing my baking skills specializing in bread
    baking. I enjoyed working with the many types of
    dough and learning as much as I did.
