History
  • Started by the Japanese Chefs Association in 2000
    by Bill Gallagher and President Deguchi to
    establish younger chefs to participate in and
    attend conference
  • Continued in Dublin, Ireland in 2002 where a
    bigger element of competition was introduced and
    programme expanded
  • New Zealand in 2006 saw a continuation of the
    competition plus delegates from 25 different
    countries

Concept
  • The concept of the name The Bill Gallagher
    Junior Chefs
  • Forum was given at the congress held in Japan
    in 2000.
  • This was a respectful way of leaving a legacy and
    showing
  • commitment to the Junior Forum by Bill Gallagher.

Bill Gallagher Junior Chefs Forum Vision
  • To educate and involve Junior chefs from around
    the world in a learning forum within WACS
    conferences through encouraging each member
    country to participate and therefore build upon
    their knowledge and aims and ideals of WACS

Role of Congress
  • The local organising committee should have the
    freedom to co-ordinate the programme (with the
    emphasis on education and social involvement)
  • A set of guidelines will be formulated at the
    Dubai conference (2008)
  • Any costs should be carried within the conference
    budget

Financial Implications
  • WACS Junior Forum sponsorship fund
  • (This fund was set up in New Zealand to help
    facilitate participation at the Bill Gallagher
    Junior Forum and currently has approximately
    USD25 000.00)
  • Junior delegates should be offered reduced
    registration fees
  • Accommodation (where possible) should be at
    reduced rates

WACS Commitment under the supervision
of the Congress committee chairperson
  • To promote and encourage worldwide participation
  • Monitor and improve programme activities
  • Welcome and recognise junior delegates
  • Encourage organising committee to make
    registration as cost effective as possible
  • To ensure that the forum continues to grow and
    become recognised as the leading activity for
    junior chefs in the world.

Bill Gallaghers Commitment
  • I have realised that active participation in
    future Junior Forums will be limited from my
    side. However, I do believe that if I am
    attending the conference, I should be given the
    opportunity to address the junior delegates on
    the history, aims and ideals of what it means to
    be part of WACS.
  • To formulate guidelines for Junior Forum in
    conjunction with Japan, Dublin, New Zealand and
    Dubai conferences, so we can take the best of all
    four and crystalise a winning formula.

Promotion
  • A campaign to all training establishments
    worldwide
  • A commitment from each WACS member country to
    send at least 2 delegates
  • An internationally recognised chef to be a key
    note speaker
  • Endorsement from the Board , educational
    committee and Congress chairperson
  • To take full use of our websites of all our
    members to promote the event to the widest
    possible audience.
  • To promote within the local chefs magazines in
    each country.
