Cheese-making
  • There are two stages in making cheese
  • Adding rennet to milk, which makes the milk
    curdle (clot).
  • Adding cheese-making bacteria, which feed on milk
    sugar, multiply and produce acid. This gives the
    cheese its flavour and helps the milk to clot.

  • Rennet clots protein in milk into CURDS.
  • If you add rennet to milk, it separates into
    CURDS and a liquid called WHEY.
  • The curds are used in cheese-making.

  • Boil and cool milk, to kill harmful bacteria.
  • Add cheese-making bacteria.
  • Add rennet

  • Salt and dry curds
