Veal Basics Where does veal come from?
  • We only use male Holsteins dairy calves
  • Dairy cows must have a calf to produce milk
  • New born females are returned to the dairy herd
  • Males are raised for veal as they have little use
    to the dairy farmer

Exclusive Feeding and Tracking System
  • During the 18-20 week grow out, our calves have
    24-hour access to feed and water. Each calf has
    our electronic transponder tag which allows for
    the complete trace ability of all our calves.

What is in the Feed?
  • Delft Blue controls all aspects of feed
    manufacture.
  • In our own feed plant, we produce a milk-replacer
    formula from fit for human consumption milk
    proteins and coconut oils
  • No growth regulators, antibiotics
  • or ruminant proteins
  • We compliment this ration with a small
  • amount of grain to assist rumination

How are the calves fed?
  • Via the transponder tag, calves have 24-hour
    access to water and feed through a fully
    automated dispenser
  • The farm manager allows a predetermined
  • amount of milk-replacer formula to be
  • consumed during the day
  • The tag recognizes each calf when they
    approach the automated feeder
  • The calf can come to the feeding nipple as many
    times during the day until the ration is
    dispensed
  • This system keeps the more aggressive
  • calves from consuming all the feed.
  • Less aggressive calves can come back
  • to the nipple at their leisure.

Slaughter and Fabrication
  • Martin Preferred's milk-fed calves are

After slaughter, carcasses are cooled
quickly and then subjected to a tenderization
period of 48 hours

Nutritional Value of Delft Blue Milk-Fed Veal
  • A recent study of the nutritional value of
    Milk-Fed Veal indicates that veal

    than 7.5 fat per portion. Fat content is
    comparable to chicken, known as a low-fat source
    of protein.

In the Back Room
  • AGING Veal does not age as beef rather it will
    turn if left to long in the back cooler. Expect
    two to three days on the shelf if product is
    merchandised fresh.
  • ROTATION Each store should use their veal the
    week it arrives. Shelf Life in the case is
    related directly to its age. All BONE IN Product
    should be used no later than 19 days from
    production. BONELESS PRODUCT should be used no
    later than 25 days. All OFFALS need to be used
    no later than 10 days.
