Where rennet comes from

• Rennet clots milk protein into curds
• It comes naturally from the stomach lining of
  calves.
• Calves produce it to help digest their mothers
  milk.
• Cheese made with natural rennet - from
  slaughtered calves - isnt really vegetarian.

Fungal rennet

• Some fungi produce rennet naturally.
• These fungi can be grown in huge vats and the
  rennet they produce is extracted.
• Cheese made with this rennet is suitable for
  vegetarians.
• But it may have a poorer flavour than cheese made
  with other rennet

Rennet from genetically altered yeast

• Scientists have altered yeast to make it produce
  the same type of rennet that calves make.
• This is suitable for vegetarians and gives the
  cheese the same flavour as calf rennet.
• But some people object to food from genetically
  altered organisms.

The right conditions for rennet to work

• For rennet to work properly, it must have the
  right conditions. These are
• The right temperature (warm, but not hot)
• The right pH (not too acid, not too alkali)
