FOOD ADDITIVES
  • By Joseph D.

2
What are they?
  • By definition a food additive is a substance
added to food to improve its flavor or appearance
    or shelf-life.

3
How are they used?
  • Coloring- add color to foods
  • Preservatives- protect against contamination
  • Artificial Sweetening Agents- sweeten foods like
    sugar but have less calories

4
How are they used?
  • Flavor Enhancers- protect or enhance flavors or
    aromas
  • Flavorings- retains flavor that may have been
    lost in processing

5
How are they used?
  • Anticaking Agents- helps things like sugar and
salt flow freely without clumping up
  • Emulsifiers- help prevent oil and water mixtures
    from separating into layers
  • Food acids- maintain a constant sourness

6
How are they used?
  • Humectants- prevent foods from drying out
  • Mineral Salts- improve the texture of foods such
    as processed meats

7
How are they used?
  • Thickeners and Vegetable Gums- helps maintain a
    uniform consistency
  • Stabilizers- maintain uniform dispersion
  • Propellants- gases that help propel foods from
    containers

8
How are they used?
  • Flour Treatment Agents- substances added to flour
to improve baking quality and appearance
  • Glazing Agents- shiny appearance or protective
    coat

9
ARMS
  • Adverse Reaction Monitoring System
  • Monitors reported adverse reactions of food
additives related to a specific food to determine
if it represents a public health risk

Some Allergic or Adverse Reactions to Food
Additives

Ways to keep them out of your diet

  • Tear off outer leaves of leafy vegetables
  • Trim the skin and fat from meat, fish, and
    poultry
  • Throw away the fat that is found in cooking meat,
fish and poultry because many food contaminates
    dissolve in fat

12

avoid from getting in your diet. The only way to
do it is to read the ingredient labels of the
