CHANGING A RECIPE
  • Some recipes can be changed without worry.

onions has little effect on the success of the
    final product
  • Others require more attention

    chemical formula.
  • There are several reasons to change a recipe
  • Changing the yield (the number of servings)
  • Substituting ingredients
  • Dietary restrictions
  • High altitude cooking

7
Changing the Yield
  • For double the yield, double the amount of each
    ingredient.
  • To reduce the yield
  • Divide the desired yield by the recipes yield.
  • Multiply each ingredient amount by the result in
    Step 1.
  • Convert the resulting measurement into a logical
    amount.
  • (Ex 1/8 cup 2 tablespoons)
  • Note You should also make any necessary changes
    in equipment and cooking time.
