2006 SPELLBOUND CHARDONNAY, CALIFORNIA Tasting
Notes Our Spellbound Chardonnay features bright
and lush tropical fruits with notes of vanilla
and classic crème brulee. Enjoy this wine on its
own or with a variety of cuisine from the Pacific
Rim to the fiery Southwest. Wine
Specs Winemaker Notes Aging and
fermentation in small oak barrels are the key
signature to the wine, calling forth the density
and complex oak characteristics of fresh vanilla
bean and luscious crème bruleee. To maintain the
crisp fresh fruit acidity within the wine we
ferment nearly ten percent of the wine in
stainless steel. In addition the vintage was
compressed compared to that of 2005 and this in
part added to the bright fruit and density of
flavors we enjoy in our 2006 Spellbound
Chardonnay.
