About me
  • Registered Dietitian
  • Manager of Nutrition Services
  • Manage a department of 4 employees plus interns
  • Been with Project Angel Food for 1 year
  • Also teach part-time at California State
    University, Los Angeles

About Project Angel Food
  • Founded in 1989
  • Serves meals to clients who have life-threatening
    illness and are nutritionally challenged due to
    their condition
  • AIDS/HIV
  • Cancer
  • End Stage Renal Disease
  • One meal per day (hot or frozen) gradually
    adding breakfast bags
  • Majority of clients are HIV/AIDS but Seriously
    Ill Population (SIP) clients increasing rapidly

Menu Planning
  • 8 week cycle menu
  • Menus to be used are formatted by Manager of
    Nutrition Services
  • Kitchen sends main entrées for the week
  • NS manager selects appropriate alternative
    meals
  • Menus printed and distributed to clients and
    placed on PAF website

Special Diets
  • Diagnosis related diets
  • Diabetes Renal NAS Lactose controlled NAS
    Low Fat GI Soft No Spice
  • Preferences
  • Vegetarian No Chicken No Red Meat No Fish No
    Pork No Nuts etc
  • CX
  • Used for allergies that cant be controlled for
    by selections offered

  • Macronutrients needed for energy and other

  • Micronutrients needed for many functions in the
    body
  • Vitamins, Minerals (also phytochemicals)

populations that we serve
  • Improved energy intake
  • Counter wasting in HIV/AIDS or Cancer
  • Appropriate nutrient intake
  • Controlled micronutrient/macronutrient intake
  • Improved quality of life
  • Improved medication adherence

How access to food in general impacts health
  • Many areas of the urban landscape have limited
    access to nutritious food
  • Food Deserts
  • Population living in an environment that
    encourages the development of chronic disease
  • People are not educated on how to make healthier
    lifestyle habits and choices are greatly
    influenced by media
