What is salmonella
  • A bacteria that exists in the intestines of all
    animals

  • Poor food handling
  • Faecal contamination from animals and humans
  • Flies and other insects.

  • Fever chills

poisoning to happen?
  • Between 12 48 hours.
  • Usually about 18 hours

Prevention
  • Cooking food to at least 70ºC it must sizzle
    and boil.
  • Holding hot food to stay hot
  • Holding cold food to stay cold

What is shigella
  • A bacteria which releases a poisonous toxin (gas)

How did the bacteria get into the body?
  • Shigella is spread from person to person and then
    to food by human contact.
  • Shigella is carried by infected people, flies and
    infected water. If a person with shigella has
    not washed their hands well they will transfer it
    to others, even before they are aware of the
    symptoms.

What is hepatitis
  • A virus
  • Must be in a living cell to survive

How did the virus get into the body?
  • From person to person
  • An infected person can contaminate the food (or
    water) and it is then eaten by another person
  • It then gets into the cells of the next person
    where it can grow
  • Hepatitis can survive in your clothes on your
    hands
