General Information
  • 3 owners Tabita, Sharon and Lyle
  • 2 bakeries the Forks Market location the
    Wolseley location at 859 Westminster Ave.
  • All baked goods are made from organic grains and
    milled at both bakeries

The Breakdown

Shifts
  • 9pm 5am
  • Overnight shift where we made lots of breads and
    dropped muffins
  • 5am 1pm
  • Continue morning bake (finish making breads, make
    cakes and squares, make and drop cookies)
  • 1030am 630pm
  • Finish morning bake and move to afternoon
    production (make cake filling, decorate any cakes
    on order, prep for the next day)
  • Do a detailed cleaning of the entire bakeshop and
    basement (where ingredients are stored)

Baked Goods
  • I made lots of different items breads, squares,
    cakes, fillings, cookies, icings, etc
  • Measured and scaled ingredients and doughs
  • Shaped doughs by hand and by using the bread
    roller and bun machine
  • Am more confident when pulling items from the
    oven and knowing theyre ready to come out

Christmas Specials
  • Made different fruit breads, Christopomo Bread (a
    religious bread), Christmas cookies, and
    decorated our display case cakes with seasonal
    decorations (for example mistletoe)

Different from School
  • The large Hobart mixer is cranked up and held in
    place with a bungee cord
  • EVERYONE has their own way of doing something I
    didnt like this at all because I would rather
    learn the right way only!

Some Extra Information
  • Both Tall Grass locations are small bakeries with
    lots of neighborhood support
  • The Tall Grass in Wolseley will be under
    construction in Spring 2007 this means a larger
    bakeshop (well needed!!!)

Major Events During Co-op
  • Our gingerbread house team took Best in Show
    2006 and Best use of Theme 2006 at the
    Festival of Trees and Lights Way to go!
  • The awards were received on November 16th, 2006

In Conclusion
  • Tall Grass was a great place to be for my first
    co-op term. I would recommend it to anyone who
    is highly interested in breads and some pastries.
    I had lots of fun and made some good memories
    and will miss the friends I made there.
