Dogme Project on Organic Food- targets

• Dogme target food consumption in public
  institutions must become at least 75 organic
• Target in Agenda 21 plan for Copenhagen 75 of
  the food served in the Citys kitchens and
  canteens must become organic by the end of 2008

• Food budget 270 million dkk or 36.2 million
  (200 dkk million in the city of Copenhagen)
• 1500 institutions (1200 in the city of
  Copenhagen)

• Reorganising, not conversion
• Cost-neutral for the institution
• Free courses and advisory service
• Reorganising the entire institution
• Culinary improvement
• Nutritional check-up
• At least 75 organic, by weight

What are they taught?

• Buy fruits and vegetables of the season
• Use more vegetables and more bread
• Use more basic food oats, pasta, rice, beans and
  lentils
• Use less meat or alternative cutouts
• Choose other recipes with vegetables and basic
  food
• Give the menu plan a critical revision and
  renewal
• Increase the culinary level
• Use procurement contracts
• Reduce food waste
• Manage economy carefully

• In the period 2001-2005 dkk 12.8 million
• - of which around dkk 5 million state subsidy
• In 2006 dkk 5.9 million
• In 2007-2008 around dkk 32 million (budget
  request)
• Total 50,7 million dkk or 6,8 million
• (From 15.000 dkk to 200.000 dkk for one
  institution)

Challenges!

• The easy results have been creamed off
• How do we anchor the projects?
• Nursing homes are difficult to reorganize
• Lack of experience from sports facilities, youth
  centres and domestic kitchens!
• 2007-2008 economy not in place!
