FLAVORFUL
Typically, more fat may be a bad thing. But in
the case of cheese, the more fat, the better.
Buffalo mozzarella gets its creamy texture and
rich flavor from its fat content, containing
almost twice the fat of cow milk.

  • To make buffalo mozzarella, one must begin with
    good quality milk. The better the milk, the
    better the cheese. Buffalo mozzarella can be made
    from whole, two percent, one percent, or nonfat
    milk but cannot be made from ultra-high-temperatur
    e processed milk.
  • Typically, the experts and the cooks

    cheese a nice, creamy flavor. To make the
    mozzarella, add citric acid to the milk, which is
    heated to ninety degrees and then add rennet to
    the milk. If you are wondering what these

    rennet should also remain refrigerated).

    spooned out of the whey and drained.
