  • Preparation time 10 minutes
  • Cooking time 25 minutes
  • Serves 2

  • Ingredients
  • 1/3 cup Toor dal
  • ¼ tsp turmeric powder
  • 1 cup chopped vegetables (pumpkin, bottle gourd,
    eggplant, lady finger, onions and tomatoes)
  • 3-4 shallots
  • ½ tsp mustard seeds
  • 1 tsp ginger garlic paste
  • ½ tsp red chilli powder
  • 5-6 curry leaves
  • 1-2 dry red chillies

  • Ingredients
  • 1 tsp garam masala
  • A pinch of asafoetida
  • 1 tsp sambar powder
  • 1 tsp oil
  • 1 tbsp Dabur Hommade Tamarind Paste
  • 1 tbsp Dabur Hommade Tomato Puree
  • Salt to taste
  • 1 tsp freshly chopped coriander (for garnishing)

Method
  • Preparation
  • Wash the lentils and cook it in a pressure cooker
    till about 4 whistles with salt and turmeric
    added to it as per requirement
  • Meanwhile, while the lentil cooks, roughly chop
    and dice all the vegetables and boil them till
    they are soft and tender
  • Once the lentil is cooked, take the pressure
    cooker off the heat and stir to check for the
    consistency of the lentil
  • Keep it aside

Method
  • Preparing the Tempering for Sambar 
  • Take a pan and add oil to it
  • Once the oil is hot add asafoetida and wait for
    30 secs
  • Now add mustard seeds and wait till they start to
    flutter
  • Add ginger garlic paste, red chilies, shallots,
    curry leaves, salt, garam masala and Sambar
    powder
  • Mix everything well and if the tempering feels
    too dry you can add a teaspoon of water to it
  • Cook for a minute or two before taking it off the
    heat and keeping it aside

  • Preparing Sambar
  • Put the cooked lentil back on the heat and add
    the boiled vegetables to it
  • Let the mix simmer for 5 minutes
  • Now add tomato puree and tamarind paste and leave
    it to simmer for 2-3 minutes more
  • You can add water to the mix if you feel it is
    getting too thick

  • Stir every once in a while to avoid the
    vegetables from sticking to the bottom of the pan
  • At this stage, you can add the pre-prepared
    tempering to the lentil mix and leave it to cook
    for another 5 minutes
  • Check for flavours and if required add a spoon
    more of Sambar powder
  • Once done, take the pan off the heat

  • For Garnish
  • Transfer Sambar to a serving bowl
  • Garnish with freshly chopped coriander
  • Serve piping hot

  • Tips
  • Even though Sambar tastes best with other south
    Indian accompaniments like idli and dosa, it can
    be eaten with roti and steamed rice as well
  • For added taste, you can also add a teaspoon full
    of ghee to it before serving
