How Your Choice of Filter Affects the Taste of
Your Coffee

  • There are generally three types of coffee
    filters stainless steel, aluminum or paper
    (though coffee drinkers looking to add some
    bling to their kitchen may prefer a gold filter).

Paper filters reduce the amount of fine coffee
bits that end up in your cup and are the main
difference between metal and paper filters.
Coffees body or mouthfeel will be thicker when
finer ground. In addition to the fines, the
coffee also has an additional touch of
bitterness, so French press coffees often have a
stronger flavor than automatic coffee filter
brews.

Paper filters remove the oils from coffee as
well. You may notice that your espresso cup
contains a few drops of oil after you order.
Similar to dark roasting coffees, dark roast
coffee is roasted so that the oils are brought
out, resulting in an oily sheen on the beans (you
should be careful though, since the oily sheen
is a sign of staleness in medium roast coffee).
Flavors and aromatic compounds are present in
coffee oils, which make coffee taste better.
Whats more, does the brewing process extract
all the necessary compounds and infuse them into
the water through the evaporation process, or
does it require them to be present during the
brewing process? We conducted a taste test after
a quick google search did not provide conclusive
results.

Two very different cups of coffee came out of
the paper and the stainless steel cup (right).
Our preferred method of brewing coffee is the
Aeropress. We brewed two cups using the exact
same ratio of coffee to water (our standard 16
grams to 170 mL and a two minute steep time). In
order to make the first cup, we used the
Aeropresss standard paper filters. In the
second cup, we used the stainless steel filter
we recently acquired from Able Brewing in the
United States.

Namrata foregoes traditional cupping methods and
plunges in with a double-fisted approach.
What are the results? In comparison with the
paper filter, the stainless filter coffee had a
much more pronounced body, while the mouthfeel of
the stainless filter was softer. Additionally,
stainless filter coffee won in both the taste
and appearance categories. In spite of the
excellent quality of both coffees, the stainless
filter made a pleasing cup because it reduced
acidity a little while enhancing chocolate
flavors. Compared side by side, the coffee made
with the paper filter tasted much cleaner and
balanced. We can imagine coffees where this
balancing effect would be welcome, but we
preferred the boldness imparted by the metal
filter in this particular coffee, which was
ground and sun dried from pulp from Kalladavepura
Estate.

In addition to filters used in Aeropresses,
filters used in coffee machines and other
brewing equipment have a similar effect on the
taste of coffee. When it comes to these
equipments, you have the choice of choosing
from filters such as white bleached paper or
natural paper filters to cloth, steel, or gold
filters.
