honey balls from Greece. Yes, you have got it
right - the name is Loukoumades, the traditional
donut dessert that has been part of their
history for millennia. You will find them
virtually everywhere in Greece. Lu-ku-ma-teh, as
they are commonly pronounced, are among the most
popular street foods that are served warm,
soaked in honey syrup with an occasional
sprinkling of cinnamon, walnuts, and toasted
sesame.

loukoumades. The dough mixing has a special
method and is prepared fresh daily. There can be
a variety of fillings, such as chocolate praline,
banana cream, etc. and toppings of honey, white
or milk chocolate, agave syrup, and the like.

the most traditional way of serving

- MAKING THE LOUKOUMADES MIX
- Making the right dough mix is the main challenge
in preparing your loukoumades dishes. You have

instruction - Take 250 gm. of bread flour in a
bowl and pour 1 cup of water (or a mix of milk
and water) onto it. Also, add some amount of
yeast and
3sugar to it. Now start stirring and mixing them
using your hands, adding a little salt on the
halfway and continue until the loukoumades mix
is well raised. Finally, you need to divide the
mix into a number of small but equal amounts and
make balls out of them. 2. MAKING OF THE HONEY
SYRUP Before you start frying your donut balls
your honey syrup should be ready so that you can
serve them hot. Pour a half cup of honey and a
half cup of water in a small pot and stir it over
medium heat until the honey melts well in the
water to give way to form the syrup. Turn off
the heat and cover the pot with a lid.
4- FRYING DONUT BALLS
- Traditionally sesame oil is used to prepare
loukoumades. Pour 1 ltr. of sesame oil into a
deep frying pot and bring it to 170 - 177 degree
C. Maintaining this temperature is critical to
cook the honey puffs to perfection. - At this point, drop the balls into the oil
carefully and deep fry them until they become
nicely golden outside and well cooked inside. - Finally, dry the loukoumades balls by wrapping
them with paper towels before dripping honey
syrup on them for a couple of minutes. - SERVING
- Place the hot honey puffs on a plate and drizzle
them with the rest of the honey syrup before
sprinkling some cinnamon powder on to them. You
can also use other toppings such as sesame seeds
