Griot (Fried Pork)

    water to cover the meat. Bring to a boil, then
    simmer until the pork is tender and the water has
    mostly evaporated.
  • Heat the vegetable oil in a deep fryer or large
    skillet. Fry the pork pieces until they are
    golden brown and crispy.
  • Serve hot with pikliz (Haitian spicy pickled
    vegetables).

Diri Kole (Rice and Beans)
  • Ingredients
  • 2 cups long-grain rice
  • 1 cup red kidney beans (soaked and cooked)
  • 2 cloves garlic (minced)
  • 1 onion (chopped)
  • 1 bell pepper (chopped)
  • 1 can coconut milk
  • 2 cups water
  • Salt and pepper to taste
  • Instructions
  • In a large pot, sauté the garlic, onion, and bell
    pepper until softened.
  • Add the cooked beans, coconut milk, and water,
    and bring to a boil.
  • Add the rice, reduce heat, cover, and simmer
    until the rice is cooked and the liquid is
    absorbed.
  • Season with salt and pepper before serving.

Soup Joumou (Pumpkin Soup)
  • Ingredients
  • 1 lb beef stew meat (cut into cubes)
  • 1 medium pumpkin (peeled and cubed)
  • 2 carrots (sliced)
  • 2 potatoes (cubed)
  • 1 cabbage (chopped)
  • 1 leek (sliced)
  • 1 celery stalk (chopped)
  • 2 cloves garlic (minced)
  • 1 onion (chopped)
  • 1 tsp thyme
  • 1 Scotch bonnet pepper (optional)
  • 6 cups water
  • Salt and pepper to taste
  • Instructions
  • In a large pot, cook the beef with garlic, onion,
    thyme, salt, and pepper until browned.
  • Add water and bring to a boil. Reduce heat and
    simmer until the beef is tender.
  • Add the pumpkin, carrots, potatoes, cabbage,
    leek, and celery. Continue to simmer until all
    the vegetables are tender.
  • If using, add the Scotch bonnet pepper for extra
    heat.

Tassot (Fried Beef)
  • Ingredients
  • 2 lbs beef (cut into strips)
  • 3 cloves garlic (minced)
  • 1 onion (sliced)
  • 1 bell pepper (sliced)
  • 2 limes (juiced)
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 cups vegetable oil (for frying)
  • Instructions
  • Marinate the beef with garlic, onion, bell
    pepper, lime juice, thyme, salt, and pepper.
