the starches then roasts or steams to produce
fermentable sugars. Chopped plants are
uniform-sized pieces, then baked for 79 hours.
These are ground plants and the pulp separated
from the juice using a big stone.
4What About a Worm?
The worm in the tequila bottle is a myth, to
start with. In the 1940s and 1950s, it was a
marketing gimmick intended to increase the brand
of drinks popularity among Americans. But some
mezcal bottles have a worm in the bottom. The
worms in mezcal are larvae of moths, and the
diversity of maguey succulents used in its
preparation are what give it its distinctive
flavor.
