About the place

• Open 7 days a week M-F 900 a.m. to 1000 p.m.
  Sat. 900 a.m. to 800 p.m. Sun. 1200 p.m. to
  600 p.m. (closed on holidays)
• 4 primary bakers
• 1 prep person plus 1 assistant
• 2 finishing persons plus 1 assistant
• 1 dishwasher (although you are required to do
  some dishes from your immediate area bowls,
  spatulas, mixing bowls, ect.)
• 2 front counter persons (start at 300 p.m. to
  close.)
• 1 office person
• Ignazio and Leslie Scarletta (owners) over see
  all aspects of their businesses. They also own
  and operate Vivere Ristorante on 3-433 River
  Road.
• High volume orders from the Winnipeg Convention
  Centre, Delta, and Fairmont, just to name a few.
  They also have walk in, phone order, special
  orders, standing orders.

Duties and Responsibilities

• Prep. and finishing of a variety of sheet cakes,
  tarts, dainties.
• Masking a variety cakes, some finishing.
• Preparing fillings, custard, ganache, whipping
  cream, curd.
• Preparing, prepping, finishing, packaging of
  orders.
• Answering phone and taking orders.
• Front counter customer service cash.

Assessment of professional and personal gains

• Some opportunity to use my creative ability in
  not only decorating skills like the Canada Day
  cake to the right but also in designing some
  slices, tortes, and desserts.

Critical events experienced during this co-op.

• Large orders from some of the hotels was an
  experience. The high volume of items was
  intimidating at first.
• During Folklorama also was another critical
  event. Daily orders of Cannoli and Italian
  Peaches for the Italian Pavilion. The Polish
  Pavilion with assorted Tortes.
• While these events were going on it was
  interesting to be part of and watch how it was
  all coordinated along the usual day to day
  activities.
