What is a Heated Surge Tank?

• A multipurpose storage tank
• Can protect a process by controlling excess
  material
• Heat exchange provides temperature control
• Material can be pumped into or out of the tank
• May include level and pressure controls in
  addition to temperature controls

Ice Cream Pasteurization

• During the pasteurization process the materials
  are added to a heated surge tank.
• They are kept at a high temperature for short
  amounts of time.
• They are then pumped to the next stage in the ice
  cream making process as indicated by the level
  control.
