What is evaluation?
  • Evaluation is all about making judgements. It is
    a very important part of designing and making and
    should be done at all stages of the design
    process so that you will be able to make the
    right decisions for the next step in the process.
  • Evaluation is a way of looking back at what you
    have already found out and using this information
    to help you produce criteria and ideas and
    eventually to make a food product which fits the
    design brief.
  • Evaluation does not happen at the end of the
    project - it is a continual process which allows
    you to find ideas and adapt and improve a product

Types of evaluation
  • Looking at and tasting existing products
  • Reading and summarising relevant points from
    various sources of information
  • considering ideas in light of consumer
    preferences
  • matching ideas to criteria
  • testing products against a specification
  • testing products for particular sensory
    characteristics - sensory evaluation

  • Carrying out nutritional analysis
  • making judgements about the suitability of
    particular ingredients or methods
  • judging the effects of different methods of
    storage or processing or ingredients, mixtures or
    complete products
  • looking at different packaging materials and
    judging which would be most suitable for your
    product

Carrying out evaluation The initial research
  • You should examine and taste existing products to
    assess what is good or not so good and if an
    alternative or better product could be made
  • At the initial research stage you should also
    evaluate the information you have collected and
    draw together points from your questionnaire

  • You should look carefully at the ideas you have
    produced and select the most appropriate ones
    which match your design criteria and the
    requirements of the design brief. You should
    choose the most promising idea and think about
    how can it be further developed
  • You should carry out sensory testing

Carrying out evaluation The development stage
  • You should evaluate and compare different
    products you have made but where you have changed
    one or more ingredients
  • At this stage you should also test the product
    against the specification
  • You may also need to test parts of the product in
    a little more detail - depending on your brief
    and product specification
  • You also need to test the effects of different
    temperatures and storage methods on parts or all
    of your products
  • Finally you need to evaluate your end product
    against the product specification and design
    brief

Evaluation A summary
  • You must always have clear objectives for your
    evaluation - you must make sure of what it is
    you want to find out
  • When you write your evaluation you must make it
    clear what you have found out, how successful you
    have been, and what is right and what is wrong
  • You must make it clear how you are going to use
    the information you have found out
  • Your evaluation should guide you towards the next
    step of the work
  • The end product you make should be the result of
    ideas which you have tested, changed or modified.
    The final product may be very different from
    your first ideas. This will be as a result of
    your evaluations.
