Objectives
  • To establish a working procedure for the early
    detection and assessment of emerging microbial
    and chemical hazards in food
  • To propose communication systems between research
    / detection agencies and the regulatory / public
    health function to ensure early detection of food
    safety risks is communicated rapidly to the
    latter.
  • To provide information and data on the
    development (potential and otherwise) of emerging
    super bugs
  •  
  • To provide data on chemical residues in food with
    particular focus on Central and Eastern Europe
  •  
  • To develop research proposals on the above and
    related areas with a particular emphasis on
    research capacity building in eastern European
    countries.

Tasks
  • Task 1 A database of European experts on
    microbial and chemical food safety
  • Deliverable date month 18.

  • Task 2 The development of a rapid predictive
    alert system for microbial hazards in the food
    chain.
  • This will include
  • a review of microbial rapid alert public health
    systems in various EU countries
  • learning from the past - an examination of
    historical information and data concerning
    food-borne pathogens in the past and the use of
    such information to predict future food related
    microbial hazards.
  • The provision of standardised methodologies for
    microbial hazard prediction and identification
  • All of the above to be discussed at 2 workshops

  • Task 3 The development of a training module on
    microbial and chemical hazards including an
    introduction to each hazard, methods of detection
    and identification, risk assessment and risk
    management (GMP, HACCP, etc) to be posted on the
    SAFE FOOD website.

  • Task 4 To prepare a report predicting emerging
    microbial pathogens in the food chain. This will
    initially require a review of the scientific
    literature on novel emerging / re-emerging
    pathogens including a review of virulence factors
    and their potential transfer among different
    organisms to produce a super bug and on farm
    in-plant studies to look for evidence that the
    development of such super pathogens is already in
    progress.

  • Task 5 To prepare a report, based on the
    scientific and other literature, predicting /
    identifying chemical food contamination including
    residues of PCBs, pesticides and mycotoxins with
    particular focus on Central and eastern European
    countries.
