Title: What are the issues
1What are the issues?
- Injustice to consumers
- Cruel use of animals
- Injustice to farmers
- Beauracratic fear machine
- Corporate greed for profits and long-shelf life
sacrificing health and nutrition - This should make us all very angry!

6What exactly is pasteurization?
- Pasteurization is the process of heating milk to
160 degrees Farenheit and holding it there for at
least 30 seconds. - Ultra-pasteurization and UHT (ultra high
temperature) is a new form of processing that
kills ALL microbes and makes a product that lasts
10 months unopened and unrefrigerated. Cannot be
cultured into yogurt. More of a milk-flavored
drink with little or no nutritional value.
7How did milk pasteurization begin?
- Pasteurization began in the early 1900s because
of swill dairies.
8Modern Milk From Farm to Factory
9Consumer Reports studyJanuary 1974
- CR study concluded The quality of a number of
dairy products in this study was little short of
deplorable. CR also states that - Pasteurization is an excuse for the sale of
dirty milk - Pasteurization may be used to mask low quality
milk - Pasteurization promotes carelessness and
discourages the effort to produce clean milk
10Disease outbreaks from pasteurized milk
1945 1,492 cases for the year in the
U.S.A. 1945 1 outbreak, 300 cases in
Phoenix, Arizona. 1945 Several outbreaks,
468 cases of gastroenteritis, 9 deaths, in Great
Bend, Kansas. 1978 1 outbreak, 68 cases in
Arizona. 1982 over 17,000 cases of yersinia
enterocolitica in Memphis, Tenn. 1982 172
cases, with over 100 hospitalized from a
three-Southern-state area. 1983 1 outbreak,
49 cases of listeriosis in Massachusetts. 1984
August, 1 outbreak, S. typhimurium,
approximately 200 cases, at one plant in Melrose
Park, IL. 1984 November, 1 outbreak, S.
typhimurium, at same plant in Melrose Park,
IL. 1985 March, 1 outbreak, 16,284 confirmed
cases, at same plant in Melrose Park, IL. 1985
197,000 cases of antimicrobial-resistant
Salmonella infections from one dairy in
California.78 1985 1,500 cases,
Salmonella culture confirmed, in Northern
Illinois. 1993 2 outbreaks statewide, 28
cases Salmonella infection. 1994 3
outbreaks, 105 cases, E. Coli Listeria in
California. 1995 1 outbreak, 3 cases in
California. 1996 2 outbreaks, Campylobactor
and Salmonella, 48 cases in California. 1997
2 outbreaks, 28 cases Salmonella in California.
11Disease risks from pasteurized milk
- Ovarian, thyroid and prostate cancer
- Childhood diabetes
- Low thyroid
- Heart disease
- Sudden Infant Death Syndrome
- Lactose intolerance
- Osteoporosis
- Infantile scurvy
- Asthma, sinusitis, bronchitis, and allergies
- Crohns disease
12Real Milk
Pasture-Fed Milk is rich in vitamins and
minerals Cows are healthy, no antibiotics
needed Very high in fat-soluble activators
in Spring Fall Full Fat Milk from
old-fashioned breeds has a high
butterfat content Raw, Unprocessed All nutrients
easy to absorb, enzymes intact Friendly
bacteria - good for gut, keep pathogens at
bay Long history of use in treating
disease Best food for babies who cant be
nursed, pregnant and nursing mothers and
growing children Demonized Always blamed for
food-borne illness Intense propaganda against
raw milk A threat to the modern dairy
industry Farm Crisis Solution The legal right to
provide raw milk can save small
farms www.realmilk.com

16Raw Milk Studies
Children fed raw milk have more resistance to TB
than children fed pasteurized milk. (Lancet, p
1142, 5/8/37) Pathological organisms do not grow
in raw milk but proliferate in pasteurized milk.
(The Drug and Cosmetic Industry, 431109, July
1938) Raw milk prevents scurvy and protects
against flu, diphtheria and pneumonia. (Am J
Dis Child, Nov 1917) Raw milk prevents tooth
decay. (Lancet, p 1142, 5/8/37) Raw milk
promotes growth and calcium absorption.
(Ohio Agricultural Experiment Station Bulletin
518, p 8, 1/33) Raw cream prevents joint
stiffness. (Annual Review of Biochemistry,
18435, 1944) Raw milk protects against asthma
and allergic skin problems. (Lancet 3531485,
1999) After three generations on pasteurized
milk, cats developed numerous health problems
and pathologies of behavior. At four
generations, all reproduction ceased.
(Pottengers Cats, 1983, Price-Pottenger
Nutrition Foundation) Pasteurization destroys
vitamin A, B complex, C, D, enzymes and whey
proteins. (See numerous abstracts
listed at www.realmilk.com)
17Nisin, Lactoperoxidase, Lactoferrin, and Ti02
- These are bacterial inhibitors present only in
raw milk. These antibacterial enzymes are
destroyed by pasteurization, making milk that is
more susceptible to contamination. - Pioneer women used raw milk to preserve raw meat
on long journeys. So did Arabs and Icelanders.

21Conventional Dairy Farm Economics
30 Cows Producing190 hundredweight of milk per
year Farmers receives about 20 to 15 per
hundredweight lowest price in 25 years Gross
income 57,000 per year Costs include feed (to
get high milk yield), vet bills and replacement
cows (average life of cow is 42 months) In 2002,
dairy farms went out of business at a rate of 16
farms per day
22Economics of Pasture-Based Mixed Farm with
Direct Sales
30 Cows on 100 Acres Cows produce 100
hundredweight of milk each per year Farmer sells
milk at 4 per gallon and equivalent price for
cream, butter and cheese Gross income from
milk and milk products 150,000 Minimal input
for feed, vet bills no replacement cow
costs PLUS whey and skim milk used to feed pigs
and chickens. Income for eggs, broilers, turkeys,
pork, beef, veal and broth 50,000 with minimal
input for feed, etc. TOTAL INCOME 200,000 with
much lower costs If 10 of the population would
buy raw milk and other products directly from the
farm, we would need 75,000 farms, all making at
least 200,000 per year potential for huge
rural revival.

25Legally speaking - What we are planning to do in
2006
- Currently, we are in an off year so it is best
not to lobby until the Fall of 2005 - We are circulating a raw milk petition--its in
back for everyone to sign - Action Alerts will be sent out
- We will need phone calls and personal visits to
legislators
26Raw Milk Petition
- We believe that the choice of all food products
should be in the hands of the consumer and that
the government has no right to tell us what we
can or cannot eat.We want to patronize small
farms and be able to buy products from the farm,
specifically, raw milk, raw milk products,
poultry, and meats. We believe small farmers
should be exempted from the laws restricting such
sales and excused from the regulations
established to protect the consumer from the
contamination found in commercially productive
dairies, slaughter houses and feedlots.NAME
