The DT Week Food Challenge
  • Year eight pupils research the following design
    brief
  • Design and make low fat fruit muffin that could
    be sold in the school canteen before school.
  • Using the Internet, magazines, text books and
    recipe books.

Ingredients To Experiment With
  • Low fat yoghurt
  • vegetable oil
  • semi skimmed milk
  • poly unsaturated margarine
  • Fruit to use
  • orange
  • apple
  • banana
  • dried fruit breakfast topping

Pupils Ready For Practical Work
  • Pupils worked individually and in pairs to trial
    their recipes. They used a variety of fruits and
    fats in their making.
  • Their planning included hygiene, safety and the
    use of a variety of equipment.

Hygienic Working Practices
  • They followed a plan to achieve controlled
    results in the time allocated for making which
    was one hour.

Product One
  • Taken from a recipe book from home. This was
    apple, apricot and raisins. These are just four
    of the six recipe tested.

Product Two
  • Recipe from the Internet for Chocolate Low Fat
    Muffins. An American recipe using cups for
    measuring. Pupils converted to grams to be able
    to make the recipes using digital scales.

  • Recipe from a recipe book making muffins.
    Ingredients using vegetable oil, semi skimmed
    milk, orange and raisins.

  • Ingredients using recipe from a text book
    showing industrial practices for making muffins.

  • Recipe from Sainsburys Magazine for Crunchy
    Nutmeg Muffin. This recipe was modified and
    nutmeg replaced by mixed spice and carrot replace
    with Sainsburys dried fruit breakfast topping.
    The sugar was reduced in the topping.

Its Fun To Taste
  • Pupils tasted each others muffins and carried
    out some sensory analysis. They chose the muffin
    that would be an ideal low fat fruit muffin
    suitable to sell in the school canteen before
    school.

  • Ingredients
  • 1 level tsp.. Mixed spice
  • 225ml sunflower oil
  • 3 large eggs
  • 150g light soft brown sugar
  • 1 ripe banana mashed
  • 150g Sainsburys dried fruit breakfast topping
  • 200g S.R flour sieved
  • Topping
  • 25g light soft brown sugar
  • 1/2 tsp.. Mixed spice
  • 11/2tbsp sunflower oil
  • 50 g unsweetened whole wheat muesli
