2Edible flowers are not an invention of our time.
The oldest cultures included the petals of some
flowers in the list of most used seasonings.
Until the Renaissance, jam or marmalade from
violet and roses were considered a real delicacy.
With the arrival of new plants and exotic spices
like saffron, flowers disappeared from the
storerooms and ingredient became for the poors
as rich employing eastern species, such as
cinnamon or cumin to flavor their dishes. Even
though roses do not have known medical
properties, its products contain a considerable
quantity of vitamin C.
3Recipes
- Infusion.
- During the winter is highly desirable to drink
infusions made out of the fruits of Rosa canina,
or commonly known as rose dog, if you are
fighting any infection. This infusion has a
pleasant, slightly acidic taste. To make two cups
crush 7-8 fruits, boiled some water add them and
let it sit for 10 min. or so. - Pink Honey
- Boil for about 10 minutes the following
ingridients 100 g eucalyptus honey and 50 g of
Rose gallica petals. Strain the liquid and
separate it in different containers. If we take a
tea spoon of the mix and we let it melt on our
mouth. it will help you to clear your voice and
soften your throat.
4Crystalized Rose Petals This is a practical idea
for decoration on your cakes. Mix 1 egg albumen
with 2 tablespoons of sugar and a couple of rose
water drops. Use whole fresh rose petals and
carefully apply the mix with a brush. Put the
petals in a dish and sprinkle sugar over them.
When they have fully dried they can be store
between vegetable paper sheets. A good source of
fresh petals is to buy whole sale roses and plug
them.
Rose petal jelly Rose de resht and Rose X
Centifolia major are the best to make this jelly.
The ingredients are 500 g rose petals, 500 ml of
water, 750 g of sugar, two lime juice. Start
cutting off the white part of the petals (base),
wash them and leave them in 100 ml of water for
12 hrs. Place the sugar with 100 ml of water and
put it to boil. When big bubbles start to appear
add the petals along with the liquid and the lime
juice. Cook everything for about 30 minutes.
Finally pour into containers and placed into
refrigerator until jelled.
5Avocado with red clover blossoms Avocado with
fresh lettuce and red clover This recipe is
light and appetizing, especially in summer. Also,
the sauce is very special and will delight the
most exquisite. Ingredients 2 ripe avocados, 4
red clover with stem, mixed greens (lettuce,
cranberry ...), 50 gr. cream, 1 dash lemon juice,
1 dash of soy sauce, white wine vinegar Salt and
pepper Preparation Wash the lettuce leaves and
place them in the tray where you are going to
present the dish. Strip avocados, cut them in
half, remove bone and place over lettuce. For the
sauce mix the cream with the lemon juice, soy
sauce and vinegar. Add salt and pepper to taste.
Finally pour the sauce over the avocados and
decorate with red clover flowers.
