Caramel Corn
  • 15 cups popped popcorn
  • 1 cup packed brown sugar
  • 1 stick butter
  • ¼ cup corn syrup
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • Heat oven to 200.
  • Pop ½ cup popcorn.
  • Measure out 15 cups popped popcorn. Do not make
    it heaping.
  • Place popcorn in a roasting pan.
  • Heat brown sugar, butter, corn syrup, and salt in
    a saucepan over low- medium heat. Stir
    occasionally. When it starts to bubble, cook 4
    minutes without stirring, remove from heat. Stir
    in baking soda.
  • Pour sugar mixture over popcorn, toss.
  • Bake 1 hour, stirring every 15 minutes, cool on
    foil.

Soft Pretzels
  • 4 c bread flour
  • 1 ½ c warm water
  • 1 T sugar
  • 2 t yeast
  • 1 t salt
  • For dipping before baking ½ c water
  • 4 t baking soda
  • Dissolve yeast in water, mix in flour, salt, and
    sugar. Let dough rise 15 minutes. Shape and dip
    in mixture of water and baking soda. Place on a
    well greased (shortening) baking sheet and
    sprinkle with coarse salt.
  • Bake at 450 for 8-10 minutes. Dip them in or
    brush with melted butter while they are still
    warm. If you like skip sprinkling with salt and
    sprinkle with cinnamon and sugar when they come
    out of the oven.

Dark Chocolate Chip Cookies
  • 6 T butter, softened
  • 1/3 c shortening
  • ½ c packed brown sugar
  • 1/3 c sugar
  • 1 egg
  • 1 ½ t vanilla
  • 1 ¼ c flour
  • ½ t baking soda
  • ½ t salt
  • 1 c dark chocolate chips
  • ¾ c chopped almonds or walnuts (optional)
  • Heat oven to 350. Beat butter and shortening in
    large bowl until well blended.
  • Add brown sugar and sugar beat.
  • Add egg and vanilla beat.
  • Combine flour, baking soda, and salt gradually
    beat into butter mixture.
  • By hand stir in chocolate chips and nuts.
  • Drop by rounded teaspoons onto un-greased cookie
    sheet.
  • Bake 10-12 minutes or until lightly browned.
  • Yield 3 ½ dozen

Fruit salsa
  • INGREDIENTS
  • 1/2 Fuji apple - peeled, cored and diced
  • 1/2 cup diced fresh strawberries
  • 1 kiwi, peeled and diced
  • 1 bananas, peeled and diced
  • 1 ½ teaspoons fresh lime juice
  • 1 tablespoon white sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • ½ bag Tortilla chips
  • Cinnamon and sugar (1/4 cup sugar- 1 () TBSP
    cinnamon)
  • Wash fruit properly. Peel, clean and dice Fuji
    apple, strawberries, and kiwis into small pieces.
  • In a medium bowl, mix together Fuji apple,
    strawberries, kiwis, lime juice, white sugar,
    cinnamon and nutmeg.
  • Cover and chill in the refrigerator
    approximately 20 minutes.
  • Arrange tortilla chips in a single layer on a
    lightly greased baking sheet. Spray with cooking
    spray, sprinkle with sugar and cinnamon, and
    bake 5 to 10 minutes in an oven preheated to 350
    degrees F (175 degrees C).
  • Dice banana into small pieces. Add to apple,
    strawberry and kiwi mixture.
  • Mix salsa well and serve with cinnamon tortilla
    chips!

Chocolate Chip Cookies
  • Day 1
  • Combine flour, baking soda, and salt in a medium
    bowl.
  • Beat butter, sugar, brown sugar and vanilla in
    large electric mixing bowl until creamy.
  • Add egg, beat again.
  • Gradually beat in flour mixture.
  • Stir in by hand choc. morsels.
  • Cover w/ plastic wrap, mark group name, and put
    in refrigerator.
  • Day 2
  • Preheat oven to 375.
  • Drop by rounded tablespoon onto ungreased baking
    sheets.
  • Bake for 9-11 minutes or until golden brown.
  • Cool on baking sheet 2 minutes.
  • Remove to wire rack to cool completely.
  • Place in Tupperware mark group name.

French Toast
  • Directions
  • Heat griddle to 375.
  • In a pie plate beat eggs, milk, sugar, vanilla,
    cinnamon, and salt with a wire whisk or fork.
  • Grease griddle.
  • Dip bread into egg mixture. Place on griddle.
    Cook about 4 minutes on each side or until golden
    brown.
  • Ingredients
  • 3 eggs
  • ¾ cup milk
  • 1 Tablespoon sugar
  • ¼ teaspoon vanilla
  • ½ teaspoon cinnamon
  • 1/8 teaspoon salt
  • Stick margarine or oil spray
  • Thick sliced bread

Breakfast Burrito
  • Yield 8-10 burritos
  • Ingredients
  • 8-10 eggs
  • Salt pepper dash
  • 8 oz. ham, diced sautéed
  • 1 cup finely shredded monetary jack or cheddar
    cheese
  • Salsa
  • 8-10 flour tortilla shells
  • Sour cream
  • Margarine
  • Directions
  • Saute diced ham in a small skillet using 1
    teaspoon of margarine until lightly browned and
    heated thoroughly.
  • Crack eggs into a mixing bowl. Add salt and
    pepper. Whisk vigorously until well blended.
  • Heat a skillet (medium-medium high heat) add
    margarine until margarine begins to sizzle.
  • Pour eggs into pan. As the eggs begin to set
    slowly stir them with a wooden spoon or spatula.
  • While eggs are cooking warm tortilla shells in
    the microwave- place them between two pieces of
    damp paper towel for 35-45 seconds.
  • Sprinkle cheese onto eggs just before they have
    set completely, cover with a lid to help cheese
    melt. Turn off heat- let cheese melt.
  • Divide eggs evenly onto each tortilla shell.
    Sprinkle with diced ham, add 1 Tb. of salsa and
    top with sour cream.

Applesauce Cake
  • Directions
  • 1. Pre-heat oven to 350º. Grease and flour an
    8 square baking pan.
  • 2. Sift all dry ingredients into a small bowl.
  • Mix melted butter with sugar. Add applesauce and
    mix well.
  • Slowly add dry ingredients into applesauce
    mixture, mixing well after each addition of flour
    mixture. Dont over mix!
  • Pour applesauce cake batter into floured and
    grease 8 square baking pan.
  • Bake at 350º for 40 min. Check after 20min. and
    turn baking pan, ½ turn.
  • Cool. Sprinkle with powdered sugar before serving!
