Raw Materials
  • 3 main ingredients
  • Grain, water, bakers yeast
  • Grain has three parts bran (outer layer), germ
    (reproductive system), and the endosperm (inner
    core).
  • Whole-wheat bread and rye consists of all three
    parts. White bread only has the endosperm
  • Most of the nutrients are in the bran and germ.

How bread is made
  • -Grain mill The harvested grain is grinded and
    then sold to bakeries
  • -The bakery
  • 1. In the mixer, yeast and water are added to the
    flour. Other ingredients are added such as salt,
    sugar, gluten, and honey.

  • The growth of yeast produces gas bubbles (CO2),
    which makes the bread rise. In a factory it takes
    about three hours to ferment the yeast.
  • 2. The mixer then kneads the dough for about
    eight minutes.
  • 3. The dough is put onto a slide before it
    reaches the dough divider.

  • 4. The dough slowly rolls through the divider and
    mechanical arms cut the dough at predetermined
    lengths.
  • 5. The dough is put on to a conveyor and is
    shaped into balls.
  • 6. Dough balls are floured so they will not stick
    before being molded.

  • 7. The dough then goes to the molder, (rests here
    so yeast can act) where it is folded and rolled
    and put into pans.
  • 8. Dough pieces go through the prover at 42
    degrees Celsius and 70 humidity. Then the dough
    is baked for 20 minutes at 255 degrees.
  • 9. Then the bread is placed on a conveyor to cool.

  • 10. It goes to the slicer where vertical, steel
    blades slice the bread.
  • 11. The bread is finally placed in pre-printed
    bags.
  • Time to make bread is 5 hours.
