Tables 9, 10, and 11 Metric Conversions by
Weight and Volume
26
Important Point! Do Not ConfuseWeight and
Volume Measure!
  • Weight is measured in ounces and is used for
determining portion size of M/MA (exception
cooked dried beans and peas) and G/B (exception
    cooked cereals).
  • Tool scale
  • Volume is measured in fluid ounces and is
used for determining portion size of V/F and
    milk.
  • Tools measuring c, qt, and gal

27
An 8 fl oz Cup May Not Weigh 8 oz
Fill an 8 fl oz cup with rose petals and another
with rocks. Their volumes measure exactly the
same (8 fl oz or 1 cup). Will they weigh the
same? Will either weigh 8 oz?
28
Common Measures for Volume, Liquid or Dry
Teaspoons, tablespoons, cups, fractions of a cup,
pints, quarts, and gallons are all volume
measures which can be described in fluid ounces.
29
Table 12 A Guide to Volume Equivalents for
Liquids
30
Portioning Tools Standardized Volume Measure
for Serving V/F Component
  • Portioning tools that measure fl oz or volume are
necessary for serving the V/F component of the
meal to ensure that each student receives the
    correct sized serving.
  • Tools include the following
  • Scoops, dishers, dippers
  • Ladles
  • Measured serving spoons

31
Table 13 Sizes and Capacities of Scoops
The size of a scoop indicates the number of
portions per quart.
32
Table 14 Sizes and Capacities of Ladles
The size of a ladle is written as oz,but it
measures fl oz.
