Classic Gokujo Boning and Fillet Knife is really
beautiful. Worth? I must say, yes!

- Weight First of all, not too light. Throwing
knives with a weight of around 4.2 are perfect to
begin with. - The center of gravity (COG) should be in the
middle of the throwing knife, plus or minus 165
mm.

- Filleting fish, poultry and other meats with this

knives. - Opened the knife from the package, and it was
perfectly sharp. It fits in the hand well, and
cuts well. - I used it the following week to process a deer
with the same good experience.

is not a beautiful on this knife.

- This thing is great for trimming meat. The curve
in the blade helps each slice glide through the
meat. I have trimmed and broken down several
whole chickens with this and had no problem. Do
not whack at bones with this like it was a
cleaver, but the blade will not fall apart if it
makes contact either, just be careful. - Excellent knife, incredibly sharp out of the box
and glides through proteins. I did have some
trouble working it through the first fish filet I
tried removing the skin of. But that might just
be technique and lack of practice on my part.
Nearly a 5 star rating for me. I recommend it.
