Warm Chicken Salad
  • for one person
  • Ingredients
  • 2 cups of mixed green salad
  • ¼ red pepper cut into strips
  • ¼ red onion cut into strips
  • 1 small skinless chicken breast cut into strips
  • 1 tablespoon of olive oil
  • Dressing Ingredients
  • Juice of half an orange
  • Small teaspoon of mustard (preferably Dijon)
  • 2 tablespoons of sesame oil
  • Fresh ground pepper
  • Cooking method
  • Combine the dressing ingredients and set them
    aside. Place the greens in a medium serving bowl
    and top with
  • pepper and onions. In a frying pan, fry chicken
    breast in olive oil until lightly browned. Whisk
    dressing and add to pan
  • then heat for a further 30 seconds. Pour over
    salad and serve immediately.

  • for one person
  • Ingredients
  • 2 slices of wholemeal bread
  • 1 can of baked beans
  • low fat butter/margarine
  • Cooking method
  • Place beans in a saucepan and allow to simmer on
    a medium heat. Meanwhile toast wholemeal bread to
  • your preference. Place the toasted bread on a
    plate then spread on butter/margarine thinly and
    pour the beans over
  • when they are piping hot. Allow to cool before
    eating.

  • Ingredients
  • 3 apples, peeled chopped
  • 1 orange, segmented
  • 1/2 pound seedless green grapes

  • Mix the melted spinach with the egg. Add milk,
    wheat flour, oil and salt. Stir the batter and
    let it swell for 15

  • Serve with fresh berries and salad.

Whipped Berry Porridge
(old traditional recipe)
  • for 2 people
  • Ingredients
  • 0,5 l water
  • 1 dl red whortleberries
  • 0,75 1 dl sugar
  • 0,75 dl semolina
  • Cooking method
  • Put the water and the whortleberries in a pot.
    Let it boil for about 5 minutes. Add the sugar
    and whip in the wheat
  • flour. Let it boil for 10 more minutes or until
    the porridge is thick enough. Let the porridge
    get cool and whip it, for
  • example, in a mixer until its smooth. Enjoy with
    cold milk.

Chicken Pocket
  • for 2 people
  • Ingredients
  • 0,5 kg chicken breasts
  • 100 g Camembert
  • 50 g ham
  • 2 pinch salt
  • 1 pinch pepper

  • Slit the chicken breast and put the salt and
    pepper on them. Put the Camembert, ham and bacon
    into the slot.Close

    frying-pan. Add all the spice cream and lemon and

    minutes. Serve it hot.

Stuffed Potatoes
  • for 2 people
  •  Ingredients
  • 4 big potatoes boiled with the skin
  • half a zucchini/courgette
  • 200 g of tomatoes
  • 1 clove of garlic
  • salt, pepper
  • 50 g cheese EIDAM round
  • chives
  • olives (green or black)
  • Cooking method 
  • Boil the potatoes for 20 min. Remove the
    potatoes. Halve them and then scoop out the
    inside. Add salt and pepper
  • to taste. Smear the edges of the potatoes with
    cloves of garlic. Put rounds of cheese on the
    potatoes. Clean the zucchini
  • and the tomatoes and slice them. Put it all in
    the oven and bake it for 10 minutes. While the
    potatoes are in the oven make
  • the dressing. Add a spoon of sweet pepper to the
    light yogurt mayonnaise . Add salt, pepper, basil
    or thyme to taste. Put

  • Cut the rolls and put them into the milk with
    the eggs.Grate the apples. Put one layer of rolls
    into the pan. Put
  • thin slices of apples on the rolls. Sprinkle
    some sugar on the apples. Add another two layers
    of rolls and apples.On the
  • upper layer of apples put the curd cheese. Put
    another layer of rolls on the top. Bake it at
    180 for 25 minutes.

    together, let them cool and then slice them into

Turkey Breast (Putenschnitzel)
  • for one person
  • Ingredients
  • 2 turkey breast
  • 2 eggs
  • 10 g flour
  • Salt, pepper
  • Oil
  • Pineapple/mushrooms

  • Flatten the meat a little bit. Mix the flour
    with salt and pepper, then whisk the egg and the
    egg-yolk. Turn
  • over the dry schnitzels one after another in

    minutes untiltheyre crispy.

Eggs in Frankfurter Sauce with Mashed Potatoes
and Tomatoes

  • 2 eggs
  • 15g mayonnaise
  • 15g yoghurt

  • 10g chopped herbs (dill, cress,
  • chervil, borage, parsley, tarragon)
  • ½ clove of garlic
  • Cooking mode
  • First you have to cook the eggs for 10 minutes.
    Then dip the eggs in cold water and peel them.
    Now mix
  • the yoghurt and the mayonnaise. Then salt and
    pepper the mixture and add the chopped herbs and
    the clove of
  • garlic. Finally pour the sauce over the eggs.
  • For the mashed-potatoes and the tomatoes
  • Peel the potatoes and cut the tomatoes. Melt the
    butter and steam the tomatoes. After that cook
    the potatoes
  • for 20 minutes, then mash them. Put the tomatoes
    under the potatoes and mix it with creme fraiche.

  • for one person
  • Ingredients
  • 50g spinach
  • 100g Ricotta Cheese
  • 65g flour
  • 1 egg
  • 30g parmesan
  • 25g butter

  • Wash the spinach and cook it for a few minutes
    with a pinch of salt. Mix together in a pan with
    a wooden
  • spoon the spinach, flour, parmesan and egg. Shape
    the gnocchi using two spoons. Cook the gnocchi
    for five minutes.
  • When they are cooked put them in a pan with
    Ricotta cheese, butter and parmesan for another
    two minutes.

Artichokes and Taleggio Cheese Salad
  • for one person
  • Ingredients
  • 4 artichokes
  • 2 tablespoons of olive oil
  • salt
  • pepper
  • 1 lemon
  • 200g Taleggio Cheese (or feta if unavailable)

  • Prepare artichokes. Remove the outer leaves and
    slice as thin as possible. Add olive oil and
    lemon to taste. Put
  • them in the centre of the dish with some thin
    slices of Taleggio Cheese.

  • For the pastry
  • 500 g flour
  • 3 eggs
  • 150 g butter

    salt and the blended but cold butter in a bowl
    and mix into a
  • creamed mixture. Rest it in the refrigerator for
    about an hour. Grease a pie-dish with butter and
    flour then roll out
  • the pastry and lune the pie-dish. Prepare the
    cream with milk, eggs, sugar, flour and
    chocolate. Blend in all the
  • ingredients to a smooth cream and pour it on the
    pastry. Then cover it with the remining strips of
    pastry. Place in
