Healthy People 2020
  • USDA has KPIs, Goals and Action Plans just like
    us!
  • KPI Human illnesses attributed to USDA
    inspected products
  • Goal Reduce Salmonella illnesses by 25 by 2020
  • Goal Reduce Campylobacter illnesses by 33 by
    2020
  • How are they going to do this? Action plan?
  • Enforcing the Salmonella and Campylobacter
Performance Standard on Chicken Parts in May 2016!

What is the new Standard? My perspective

  • Rolling 52 week Standard (Generally 1 sample a
    week)
  • Publishing our Category on the internet!
  • Categories
  • Category 1 is lt50 of the Standard
  • Category 2 is meeting the Standard
  • Category 3 is failing the Standard
  • Paired Pathogens!

4
How are we going to get there?!
  • Use your friends
  • The Brain Trust
  • Dont hoard your data!
  • Discuss your results with
  • Plant operations
  • Antimicrobial vendor
  • Live production

  • Multiple samples per zone per day (poultry
    modernization pre/post req.)
  • Tested for enterobacteriaceae, Salmonella and
    Campylobacter
  • This chart is 1 months worth of data averaged
  • Also look at Out of Control signals at each zone
    by day

  • Look at loading going into the chiller (if too
    high, overwhelms)
  • Minimum expectation of 2 log EB reduction through
    chiller

Live Production
  • Do they know what data you collect?
  • How often do you discuss data with them?
  • Do you know what they are doing in the field?
  • Trials? Prebiotics, probiotics? Removing
    antibiotics?
  • Vaccine development? Where did the isolate come
    from?
  • From field? Or from post intervention sample?
  • If you had a list of growers with opportunities,
    what would it look like?
  • Paw score, EB loading, SLM , SLM serotypes of
    concern?

8
Do No Harm
  • Ensure we do not harm our chickens,
  • our team members,
  • the environment
  • Or the people that eat our chicken!
