    diaries and food processing industries generate
    huge amounts of wastewater laden with solid

Indian food is very unique compared to any other
cuisine from around the world. The main
distinctive factor is the unique amalgamation of
spices across different recipes. India is the
largest producer of spices around the world and
the Indian cuisine is characterized by the
extensive use of these spices, each imparting a
unique flavour and making the dish uniquely
aromatic.
 Amchur (mango powder), basil, bay leaves,
cardamom, cinnamon, coriander, cloves, cumin,
curry leaves, fennel, fenugreek, garlic, ginger,
kokum (this gives dishes a purple hue),
lemongrass, mace , mint, mustard, nutmeg,
pomegranate, poppy seeds, pepper, sesame,
tamarind, saffron, and turmeric are traditionally
used in a variety of combinations with oils, ghee
and butter in Indian food.

  • What happens when an ordinary grease separator is
    used in a large Indian kitchen?
  • Installing inefficient grease traps or
    interceptors is not an answer to efficient
  • handling of kitchen waste.
  • Indian cuisine lavishly uses a variety of spices
    with oils , ghee and butter.
  • When mixed with wastewater they form a tough
    broth in the STP that becomes
  • difficult to separate.
  • Most brands of Grease separators available on
    the market are ill-equipped to handle the
    complex nature of wastewater produced in the
    large Indian kitchens.
  • What choices a kitchen owner has in this
    scenario?
  • - Either install an inefficient and labour
    oriented Grease Trap that does a poor job leading
    to clogged pipes and over-working STPs incurring
    heavy cost of power.
  • Or install an imported Grease separator at
    exorbitant cost that holds the wastes which has
    to be pumped out to a disposal truck for a fee at
    regular intervals.
  • Or look at other better designed alternatives.
  • It has been mandated by PCBs that it is the
    responsibility of the owner or the maintenance
    contractor of such installations ,
  • to treat the waste water safely before it enters
    the sewer.
  • to ensure that no foul smell emerges from the
    treatment facility polluting the surrounding
    environment.

  • Criteria in the selection of Grease Separator
  • It is a mandatory obligation to install EN 1825
    type grease separators to ensure
  • that grease , oil and solid wastes are
    effectively removed from the wastewater .
  • This specifically applies to commercial kitchens
    , milk and food products industry.
  • Each industry or commercial kitchen places
    unique demands on the capacity of grease
    separators, lifting equipment and piping
    installations.
  • Customisation therefore calls for tailor-made
    designs to individual locations.
  • Adaptable products of proper size, materials and
    design are very important for successful
    operation of such separators.
  • Basics considerations in the selection of a
    separator for a given location
  • Location of the kitchen or the waste generation
    point in food processing facility.
  • Location of the waste treatment point like STP
    or disposal point like sewer connection.
  • Whether the kitchen/waste generation point is on
    a higher or on the same plane
  • wrt treatment/disposal point.
  • 4. Level of separation and handling of disposal
    of separated grease and solids.

  • Sizing and selecting the requirement of
    features of a separator.
  • Number of meals served per day.
  • Volume of wastewater generated per day.
  • Point of disposal of wastewater to a STP or
    public sewer.
  • Is full disposal of waste including wastewater,
    grease and solids aimed for.
  • Is the use of a disposal truck envisaged to
    offload the entire waste.
  • If partial disposal is opted , the disposal
    methods of solid and grease.
  • The level of internal cleaning of the separator
    opted.
  • Availability of personnel to operate and maintain
    the separator.
  • The level of automation of separator operation
    required.
  • Base on the above considerations the correct
    type and size of grease separator
  • can be offered that will not only meet all the
    requirements fully but also offer
  • unmatched performance and ease of operation and
    maintenance.
  • Any mismatch between the ground situation and
    the selection of separator will
  • lead to complications.
