Personal Pizzas
  • Ingredients
  • 1 English muffin
  • 2 slices tomato
  • Dried basil or oregano
  • 2 slices mozzarella cheese (or shredded cheese)
  • Choose own toppings (pepperoni, mushrooms, other
    veggies, etc.)
  • Directions
  • 1. Split muffin in half and place tomato slice on
    each half.
  • 2. Sprinkle tomato with basil or oregano. Top
    with cheese and toppings.
  • 3. Place on paper or microwave-safe plate.
  • 4. Microwave for 2-3.5 minutes or until cheese
    melts.

Chocolate Cinnamon Rolls
  • Ingredients
  • 1/2 cup chocolate chips
  • 1/2 cup chopped nuts
  • 2 tbsp. honey
  • 1 can refrigerated cinnamon rolls
  • Directions
  • 1. Mix together chocolate chips, nuts and honey.
    Place one tablespoon of the mixture into 8
    different mugs (if you don't have 8 mugs, divide
    the mixture and repeat this process for each
    roll).
  • 2. Cut cinnamon roll into 8 pieces. Place one
    piece over the chocolate chip mixture in each of
    the mugs.
  • 3. Microwave each mug for 2 to 3 minutes, or
    until surface springs back when lightly touched.
  • 4. As soon as you remove from microwave, invert
    mug immediately over a plate. Leave mugs over
    rolls for about three minutes, then remove.

Nachos Supreme
  • Ingredients
  • 1 bag tortilla chips
  • 2 tablespoons mild green chilies or olives
  • 1 cup grated cheese (Cheddar, Swiss, Monterey
    jack, etc.)
  • Directions
  • 1. Place chips on microwave-safe plate.
  • 2. Sprinkle olives and/or chilies and cheese over
    chips.
  • 3. Microwave for 1 to 2 minutes or until cheese
    melts.

Chocolate Fudge
  • Ingredients
  • 12 oz. chocolate chips
  • 1 can condensed milk
  • 2 heaping tbsp. peanut butter
  • Directions
  • 1. Place chips and milk in microwave-safe bowl.
  • 2. Microwave for 5 minutes.
  • 3. Remove from microwave and stir in 2 tbsp.
    peanut butter.
  • 4. Spread in pan, cool and cut.

Chili Macaroni
  • Instructions
  • 1 box Kraft Macaroni and Cheese,
  • 1 can chili
  • 2 tbsp. milk
  • bottled water (or tap water)
  • Directions
  • 1. Pour macaroni into a microwave-safe bowl and
    add water on top until the noodles are covered
    with water.
  • 2. Microwave noodles for 6 minutes, stirring with
    a fork every 2 minutes or so.
  • 3. When done, drain any excess water off noodles
    and add chili. Stir in chili and microwave for
    one more minute.
  • 4. Add packet of cheese to noodle/chili combo and
    stir.
  • 5. Add milk to noodles until creamy.

Food Care
  • Food-borne illnesses can occur anywhere, but they
    may be more likely in any situation where proper
    food handling and storage can be difficult.
  • Here are some tips for keeping food safe
  • Always take perishable food home quickly after
    you go grocery shopping. Leaving your groceries
    in the car while you stop to visit a friend may
    cause spoiling to start. Perishable foods should
    not be left out of the refrigerator for more than
    two hours.
  • If you use a microwave oven, allow for extra
    cooking time to cook food more thoroughly.
  • Refrigerate all carry-out food including pizza,
    fried chicken and Chinese food as soon after
    serving as possible.
  • Never store food on the window ledge, even if the
    weather is cold outside. Buildings radiate heat,
    making the sill warmer than the outside
    temperature.
  • Always check "care packages" (food from home) to
    see if the cans or packages need to be
    refrigerated after opening. These precautions
    should lower the risk of food-borne illnesses.
    For questionable food, the old adage "When in
    doubt, throw it out," still holds true.

    collegeA warming agent This means a microwave
    or oven.
  • A small pot with a lid
  • A pot with a lid frees you up to make hot
    cereal, rice, ramen and macaroni and cheese in
    the common kitchen. Be warned--your love for
    ramen will become a fierce rival for your love of
    macaroni and cheese. Be sure to know your
    university policies on cooking and food
    preparation in the halls.
  • Coffee potA coffee pot lets you make coffee,
    tea, cocoa, and instant cereal. Think soothing,
    hot, lemon-flavored medicine for your head cold
    during finals week.
  • Vital dishes and utensils You need items like a
    plate, bowl, cup, fork, knife, spoon. Look for
    these in durable, easy-to-clean plastic. Find a
    mug with a lid you can take along to class, one
    that survives when dropped and will withstand a
    little heat. Get strong utensils--a fork, a
    spoon, and a knife (do not make yourself spread
    peanut butter with a spoon).
  • All-In-One Swiss Army knifeA sharp blade, can
    and bottle opener, and corkscrew. Buy yourself
    these things, or pick up a genuine Swiss Army
    knife.

Summer Pasta
  • Ingredients
  • 1 Box of any kind of pasta cooked (spaghetti is
    best, but anything will work)
  • 3-4 Tomatoes, cut into any size pieces you like
  • 1 block Mozzarella-cubed
  • 1 bunch fresh Basil-chopped
  • A drizzle of Olive Oil
  • Directions
  • Cook pasta.
  • Chop tomatoes, basil and mozzarella.
  • Combine all the ingredients in a bowl and drizzle
    a bit of olive oil on top.
  • Salt to taste.

Quick and Easy Stir-fry
  • Ingredients
  • 1 pack of Ramen noodles
  • Vegetables
  • Directions
  • Boil water and put the Ramen in (as you normally
    would).
  • When it's done, drain the water.
  • In a wok or skillet, add veggies (if they're
    frozen, you should defrost them before this
    step).
  • Add Ramen noodles to veggies until everything is
    warm .
  • Add seasonings on top of it all, or soy sauce if
    you prefer.

Quesadillas
  • Ingredients
  • 1 (8-in.) flour tortilla
  • 2 slices of cheese
  • 1/2 cup Salsa
  • Directions
  • Place tortilla on microwavable plate.
  • Place cheese on half of tortilla.
  • Fold tortilla in half to cover the cheese.
  • Microwave on HIGH 25 to 40 seconds or until
    cheese begins to melt.
  • Let stand, covered, 1 minute or until cool enough
    to eat.
  • Fold in half again.
  • Serve with salsa.
  • Top of Stove
  • Place tortilla in medium skillet on medium heat.
  • Place cheese on half of tortilla.
  • Fold tortilla in half to cover cheese.
  • Heat 1 minute on each side.
  • Serve with salsa.

English Muffin Pizzas
  • Ingredients
  • 6 English muffins, split in half
  • 14 ounces pizza sauce
  • 12 ounces pepperoni, sliced
  • 2 cups shredded mozzarella cheese
  • 1 can (2.25-oz.) sliced black olives, drained
  • Directions
  • Preheat oven to 400F.
  • Line a baking pan or baking sheet with aluminum
    foil.
  • Arrange muffin halves in baking pan and spread 2
    to 3 tablespoons pizza sauce on each.
  • Sprinkle with mozzarella cheese and olives.
  • Bake for 10 minutes or until cheese is bubbly.

Chili and Rice Wraps
  • Ingredients
  • 1 28oz can Chili
  • 1/2 cup Water
  • 1 cup Minute Rice
  • 6 Flour tortillas
  • Cheddar cheese-shredded
  • Tomatoes-chopped
  • Green Onions-sliced
  • Directions
  • In a large sauce pan, bring chili and water to a
    boil.
  • Stir in minute rice, cover and cook on low heat
    for 5 minutes.
  • Spoon chili mixture into tortillas.
  • Top with cheese, tomatoes and onions as desired.

Chicken Fajitas
  • Ingredients
  • 1 pound of chicken breasts
  • olive or any vegetable oil
  • 1 large onion sliced
  • chopped garlic - to taste
  • 1 or 2 Red and/or Green peppers sliced
  • spices - cayenne pepper, chili powder, pepper,
    salt
  • optional - chopped lettuce and tomatoes, olives,
    sour cream, guacamole, salsa
  • Directions
  • Slice onions and chopped garlic.
  • Sauté onions and garlic in a little oil.
  • Add a sprinkle of chili powder and hot cayenne
    pepper.
  • Cut uncooked chicken breasts into strips. (Be
    sure to wash knives and cooking boards very well
    after cutting the chicken).
  • Slice strips of green and/or red peppers.
  • Add chicken and peppers to the onions, garlic and
    spices and sauté until the chicken is cooked
    (10-15 min).
  • Be careful about burning the pan (this could
    significantly increase your clean up time).
  • For serving, place the chicken and peppers inside
    of tortillas.
  • Add sour cream, guacamole, salsa, sliced
    tomatoes, lettuce, olives or anything else you
    want.

Rules of Cooking
  • Buy some crates to store dry goods.
  • Be prepared by keeping your refrigerator stocked.
  • Put only microwave-safe dishes in the microwave.
    That means no metal or tin. Glass or Corning ware
    is the wisest choice.
  • Always cover your food with wax paper or a paper
    towel before you microwave it to avoid
    splattering.
  • Use a pot holder when removing anything from the
    microwave.
  • Keep the bugs away.
  • Clean your dishes immediately after you finish
    eating.
