Muffins.
METHOD
INGREDIENTS

• 10 oz plain flour
• 2 large eggs
• 4oz caster sugar
• ½ pt milk
• 4oz butter or margarine
• ½ tsp vanilla essence
• 50g flavourings e.g. fresh fruit such as
  blueberries dried fruit, coconut, choc chips
  etc.1 tbsp cocoa powder for chocolate muffins.
• 12 muffin cases, container to carry home, apron.

• Put all dry ingredients except sugar into a large
  bowl. Add extra flavourings such as chocolate or
  fruit.
• Put milk, sugar, vanilla essence and eggs into a
  jug. Beat.
• Place margarine in another jug. Melt briefly in
  a microwave.
• Add melted margarine. Stir.
• Quickly combine all ingredients in the bowl.
• Divide between 6 muffin cases.
• Bake in a hot oven (electric 200 degrees, gas 6)
  till well risen, golden brown, and they bounce
  back when touched
