High Volume Production Bakery

  • Widest range of different clientele shop there.

My Responsibilities
  • 3 different kinds of shifts
  • MIXING
  • Mix the breads, buns, peach glaze, biscuits etc.
  • Bench
  • Weigh out, mold breads, buns, coffee cakes. Pan
    breads.
  • Make cinnamon buns
  • Bake Proof everything I made
  • Help open the store by getting all prep from
    night before out of the cooler/freezer to get
    ready for baking
  • Muffins Donuts
  • Bake decorate donuts (fritters, Choc/rasp.
    filled to maple topped.)
  • Scoop muffins make the muffin mix
  • Frozen lay out, had to get all the frozen items
    ready for the next morning
  • Also I had to learn the paperwork. What was
    selling what we had to make each day. Also what
    to have ready for the next days shift

  • Once a month they have dollar days. We made A LOT
    of bread buns those weeks

Professional Goals
  • Want to develop my time management skills
  • I had 8 hours to make close to 30 different types
    of bread, 10 different buns, cinnamon buns, and
    get 5 types of breads prepped for the next day.
  • Learn how to multi-task better
  • Had to mold bread, pan breads, while watching the
    ovens proofer. Had to put out breads in a
    certain order. Get out the night before items out
    and proofed and ready.
  • Learn a new wide range of products
  • I had to almost start over. The way they do their
    biscuits, ciabatta bread, and a couple of other
    breads were different than the way we did in
    class. I had to learn to break my old habits and
    adapt to the way of making their products.

Personal Goals
  • Learn to communicate better
  • I had to learn to understand people in a loud
    atmosphere. Due to the wide range of employees in
    the bakery I had to learn to bridge all kinds of
    communication barriers.
  • Gain more on job experience
  • This was the first time I worked in a commerical
    bakery , let alone any bakery. I gained lots of
    experience in a fast paced high production
    bakery.
  • Learn how a bakery works
  • Learn a lot of ways to be more accurate on
    measuring out the dough to be made so there was
    no left over/waste. I learned a good deal of
    paper work, from what was selling, what is to be
    made to general inventory. I learned that
    sometimes fresh is the best way but sometimes you
    do not have the time or the money to spend on the
    labour Example Croissants. They are time
    consuming and you can buy them frozen for 10-29
    cents a piece and virtually no labour and similar
    quality

Interests Conclusion
  • It was a great eye opener to the fast paced
    commercial way of baking. Im very happy that I
    went for my first coop in this environment. I had
    to learn a lot in a short period of time with
    little training.
  • But to work there as a full time job for a long
    period of time.. NO thanks. The bulk of the work
    is breads. If you want to concentrate of
    breads/buns then this is for you. If you want
    creativity or pastries this is not the place to
    be. Creativity leave it at home. You must do
    everything the same way all the time. You cant
    make anything but what is on the list and you
    dont actually mold or round anything. Its all
    done by machine (exsheeter, bun divider).
  • Even the cakes and donuts are decorated the same
    way every time, unless a customer wants a cake
    decorated a certain way.
  • I do remember making cookies one day. Mixed from
    a bag scooped baked.. Done. But around
    Christmas everything was brought in frozen the
    most work you would do on those cookies was to
    dip them in sprinkles.
  • All and all it was a good experience in the way
    that it opened my eyes to the commercial world.
    Its fast paced I see why so many people quit
    this job. Low pay a lot of work. The good part
    was that I had to learn a lot learnt to work
    in a fast paced business.
  • Would I recommend it to anyone for their first
    coop, yes, just for the challenge of keeping up
    and getting to learn so many departments. For a
    job maybe for awhile, but I would get bored very
    quickly and get extremely lazy!
