pinto, black or red beans soaked
overnight, then cooked and mashed. They are then
fried in pork fat or bacon grease and sometimes
topped with onions, cheese or sauce.
6el arroz mexicano
Mexican rice in a restaurant is toasted before
adding liquid, tomato sauce or bullion and
sometimes onions. It has a salty taste and a
fluffy texture.
7el guacamole
- condiment made from mashed avocadoes with lemon,
onion and other seasonings.
8mole
a complicated Mexican condiment made from
Mexican chocolate, various chili peppers, sesame
seeds, cinnamon and other spices. Usually served
over chicken or enchiladas.
9- 5 ancho chili halves, dried, seeded
- 2 tomatoes, sliced
- 1 half onion, sliced
- 10 tomatillos, halved
- 1 plantain, ripe, sliced
- 3 pan dulces (little sweet breads, can be
substituted for 5 dried tortillas and some sugar)
- small piece of cinnamon bark (substitute 1 tsp.
dried cinnamon) - 3 oz. chocolate
- Pinch of dried oregano
- 3 Tbs. sesame seeds
- Pinch of black pepper

10- Lightly fry anchos, bread, plantains
- Place in a bowl and cover with cooking liquid
from chicken. Lightly break up ingredients and
let soak while preparing other items. - Toast sesame seeds in a frying pan for a minute.
Add remaining ingredients (including chocolate)
and fry to soften. - Put all ingredients in a blender and blend smooth
adding chicken broth as needed. You will probably
have to do this in a couple batches. - Simmer the blended mole in a large pot with
remaining chicken broth for ten minutes. Add salt
and sugar to taste. - Add chicken pieces and simmer an additional 10

11los tamales
- meat filling inside of cornmeal. It is steamed
inside of a corn husk.
12las flautas
- beef, pork or other meat filling wrapped in a
corn tortilla and deep-fried. Served with sour
cream, guacamole or salsa.

- vanilla custard made with eggs, cream and sugar.
It is served cold with a caramel sauce on top.
14las sopapillas
- fried flour tortillas with melted butter, dusted
with cinnamon or powdered sugar and drizzled with
honey or chocolate
15las carnitas
- marinated, seasoned, roasted pork served in
flour tortillas
16los burritos
- meat, cheese, and other savory fillings wrapped
in a large flour tortilla
17la quesadilla
- two flour tortillas stacked and filled with a
variety of cheeses, sometimes chicken, steak, or
vegetables. It is toasted so that the cheese
melts.
18los taquitos
- corn tortillas stuffed with shredded beef or
chicken, rolled up and deep-fried.
19las tostadas
- tortilla fried in oil until crispy can be
topped with a variety of toppings.
20la chalupa
- Flat corn tortillas with fried beans, sprinkled
with cheese, and topped with guacamole salad.
21la salsa mexicana
- Mexican condiment made of diced tomatoes,
peppers, onions, jalapeños and cilantro. Can be
served hot or mild. Not just for nachos!
22el pico de gallo
- diced tomatoes, onions, jalapeños and cilantro.
This pico de gallo has lime juice for extra
flavor!
23la tortilla
- homemade tortillas are made from flour,
vegetable oil, baking powder, salt and water.
They are rolled thin and cooked in a skillet.
They are a staple in Mexican cuisine and are used
in a wide variety of dishes
